Four day Paleo diet diary

Monday:
Breakfast:
1 egg, 1 piece of sprouted whole grain toast (with Earth Balance, which is a vegan butter).
Lunch:
Lentil Salad (Lentils, carrot, onion, and celery accompanied with a olive oil and vinegar dressing)
Dinner:
Veggie Burger, Steamed green beans
Tuesday:
Breakfast:
1 Rice Cake, topped with all natural peanut butter
Lunch:
Lettuce wrap with a tuna salad, tuna salad: tuna, celery, carrot, onion, and lemon juice
Dinner:
Salmon with garlic and lemonbaked cauliflower
Wednesday:
Breakfast:
Paleo Pancakes (1 banana, 2 eggs, 1 tsp. cinnamon)
Lunch:
Garden Veggie Burger with homemade (or sugar free) salsa and sliced avocado on top
Dinner:
Grilled Tilapia and steamed asparagus
Thursday:
Breakfast:
Spanish Breakfast Taco (a creation of my own)
Lunch:
Spinach Wrap with hummus and veggies (bell pepper, onion, diced tomato, cucumber)
Dinner:
Greek chopped salad with cucumber, olive, tomato, bell pepper, garbanzo beans olive oil & vinegar.
